The Merits of Implicit Methods”

This talk deals with central methodological questions of sensory and consumer science. What’s our business? What do we want to find out? What do we know and how can we find out? The method has to be chosen under consideration of the research question and the required and possible implicitness of method. Criteria to quantify the implicitness of sensory and consumer science methods is suggested and discussed.

Fostering the transition to healthy and sustainable eating – Sensory science matters”

Consumer’s daily food choices have a huge impact on the environment and on climate change. Suggested mitigatory strategies (e.g. finding alternative protein sources, fostering food by-products recovery, valorisation of autochthonous food) require a substantial modification of consumer behavior, which is difficult to achieve. The webinar will focus on how sensory science may contribute to foster sustainable development in the food sector by addressing the important goal of identifying and overcoming the main perceptive and psychological barriers to healthy eating in vulnerable population targets.
